L’Atelier du Chocolat

Did you know that the city of Bayonne plays an important role in the history of chocolate? Indeed, France’s first coco workshops were located in the Basque Country in the 17th century…

A family business dating all the way back to 1951, L’Atelier du Chocolat is renowned for its famous chocolate bouquets and, above all, the exceptional quality of its products. And L’Atelier du Chocolat also offers an introductory 90-minute tour of its chocolate factory in Bayonne.

The tour covers every step of the chocolate-making process, from planting a cocoa tree to putting the finishing touches to the end product. It features videos, an exhibition of ancient machinery, a look round the laboratory, and an educational film.

And needless to say, the tour finishes with a tasting session! As such, visitors are introduced to the subtle changes in flavour created by the different recipes or the origins of the ingredients used.

The shop is open between 10:00 and 19:00 in July and August (with the last tour leaving at 18:00), and from 10:00-12:30 and 14:00-18:00 throughout the rest of the year (last tour at 17:00).

Les Halles de Bayonne

Les Halles de Bayonne features 22 stalls selling the finest fresh regional produce. This market is recognised by culinary experts for its quality, refinement and authentic atmosphere.

Opening hours: Monday to Friday from 07:00 to 13:30, Saturdays from 06:00 to 13:30, Sundays from 08:00 to 13:30.

Way back in 1854, a 22 year-old Pierre Martin Cazenave founded his own eponymous chocolate-maker’s on the Rue Lormand in Bayonne.
Over 150 years later, the Cazenave team are still producing their famous homemade and handcrafted chocolate, made purely from cocoa beans and natural produce and retaining the quality and traditions of true Bayonne chocolate.
The house speciality at Cazenave is their hot chocolate, served with hand-whipped foam.

Both a boutique and tea room, Cazenave is open from Tuesday to Saturday from 09:15 to midday and from 14:00 to 19:00 (and Mondays during the school holidays).

Pariès Chocolatier

A veritable Basque institution, the house of Pariès – now on its fifth generation of family owners – is the last surviving chocolate maker to have been passed down directly from one of the famed Chocolatiers de Bayonne.
Founded by Jacques Damestoy in 1895, the establishment has built an exemplary reputation for itself due to its specialist expertise and the excellence of its products.
With its Basque cakes, kanougas, chocolates, turrón nougat, pastries and ice creams, Pariès has an extensive range of specialities that are sure to delight even the sweetest tooth.

Pierre Oteiza

A livestock breeder and producer based in the Aldudes Valley in the Basque Country, Pierre Oteiza invites you to his Bayonne boutique to discover and taste the finest local delicacies, including renowned local hams and sausages.
In Pierre Oteiza’s boutique, you will also find pâté, foie gras, duck breast, duck confit, freshly prepared dishes and attractive gourmet hampers to take home as souvenirs!

Maison Montauzer

Since it opened in 1946, three successive generations have been at the head of Maison Montauzer. Today, the family is working to preserve the traditional methods that have always guaranteed the high quality of its produce, and above all its PDO-labelled Bayonne ham.
What with its delicious range of hams, confit delicacies, rillettes and sausages, leaving empty-handed is simply not an option!
Such is the quality of Montauzer’s ham that we have included it as one of the products served for breakfast and an evening apéritivo at our hotel in Bayonne.
